  • We provide the wine list.
  • We ask – suggest an aperitif.
  • We ask if they prefer water, sparkling or mineral or we propose one, in case we know what they prefer.
  • After the order is taken, sommelier approaches the station with his utensils and glasses needed for service.
  • He places on the tray the appropriate glasses after he checks if they are clean and shiny by lifting them up to light.
  • He also takes his glass for tasting.
  • He gets two small dishes, and a napkin that places on the dish that the bottle will be placed.
  • Guéridon‘s set up.

*** Set up is referring to right-handed persons. In case of left-handed, set up is “MIRROR”

  • Glasses set up for guests.
  • Glass is placed up and right of the customer.
  • Always move clockwise.
  • We present the wine from the left side of the customer and serve from the right.

***Left-handed are serving with an obvious open move like hugging a tree
Then sommelier returns to gueridon for the bottle opening.

  • He returns to his station and gets all the utensils he needs for Gueridon’s set up.
  • He gets 3 small dishes, 2 napkins, where the first one is being placed on the small dish that the bottle will be placed and the second one on the small dish that we will place the jug and the glass for tasting.
  • He gets a candle-candlestick, matches, jug.
  • He gets the basket and he places the bottle carefully.
    Guéridon set up.

*** Set up referred to right-handed. For left-janded, set up is “MIRROR”

  • Always moving clockwise.
  • We present the wine from the left of the customer and we serve with the jug from the right side.

He returns to Gueridon for the bottle opening.
