SERVICE PROCEDURES

We are all aware that the most important thing for each guest while visiting a dining area is to be pleased with the taste that will be served. Although, if we stick for a while to this previous sentence, which consists of a foundation quote, we will observe that this ends with the word “served”. This is the key that provides the holistic approach that so much defines the whole customer experience. To be accurate, service, among dish’s preparation, are the core of the customer experience. Some basic principles of service can be found below:

Menu Presentaion

We always give the menu first to the ladies and then to the gentlemen. As you share the menus you can ask them if they want to start with a water or an aperitif. If they are not sure what they want you can suggest them. For example during a hot month you can suggest something fruity and refreshing, low in alcohol. With this simple move you can recognize customer’s mood and how open he might be to your suggestions. This way you will achieve better sales!

  • Pay close attention to the client’s body language to understand whether or not they need your help.
  • You should always have an excellent knowledge of the products you sell
  • Try to describe the menu dishes briefly but concisely
  • Always know if there are any deficiencies in the menu. This means that before the shift starts you should talk to the chef and cooks
  • Pay close attention to the dishes of the day
  • If your customer orders a dish that takes a long time to prepare, let them know right away so you can avoid any inconvenience later.
  • If your customer asks what is the most delicious dish on your menu, it would be more prefferable not to answer “everything”. Try to understand first what he prefers (fish, meat, vegetables, etc.) (sweet and sour, spicy, etc.). Do not be afraid to ask! Only then will you be able to suggest the best dish for him!
  • You should always know the wine list and what this contains
  • About alcohol! Do not always try to sell the most expensive, recommend the one that really matches the food choice they made or will make
  • Listen carefully to what the customer tells you
  • Always write down the order to avoid any mistakes
  • Ask about any food allergies
  • Always repeat the order at the end
  • Thank them and take back the menus

The order of serving at the table is as follows

  • We always serve the ladies first
  • The older ones before the younger ones
  • The guest of honor IS always served first
  • The organizer-host is always served last

Serve on the left:

  • The saucer for bread
  • Side dishes
  • Cleaning and picking up a table
  • When the Waiter distributes the food to the customers

Serve on the right:

  • Dishes
  • Drinks
  • Wine / champagne presentation
